Gluten Free Apple Bread {Egg Free}

  • 1 ¼ cups milk divided
  • 2 ½ tsp. rapid rise yeast
  • 3 cups gluten free bread flour mix
  • 2 tsp. psyllium husk powder
  • ½ tsp. salt
  • ¾ cup sugar
  • 2 Tbsp. melted coconut oil


  • 3 Tbsp. butter softened, divided
  • 2 small granny smith apples thinly cut
  • 2/3 cup brown sugar
  • 2 ½ tsp. cinnamon


  • In a small measuring cup or bowl, heat ¼ cup of milk to 100 F. Mix in yeast and set aside to proof.
  • In the bowl of a stand mixer, add flour mix, psyllium husk powder, salt and sugar. Mix together.
  • Add in the yeast mixture, coconut oil and remaining milk. Mix on medium speed for 2 minutes.
  • Cover bowl and let the dough rest for 10 minutes.
  • Meanwhile, prepare 9 x 5 baking pan by spraying lighting with cooking spray.
  • Start preparing apples by washing, peeling and coring apples.
  • Thinly slice into thin pieces. Set aside.
  • Prepare a 16 x 20 inch sheet of parchment paper by greasing with ½ Tbsp. of the softened butter.
  • With greased hands, gently press the dough out on the parchment paper, covering a 14 x 17 size area.
  • Spread softened butter over dough.
  • Mix brown sugar and cinnamon together and sprinkle over dough.
  • Spread butter over the dough.
  • Sprinkle the brown sugar cinnamon mixture over the dough.
  • Slice the dough lengthwise into 3 long strips. Widthwise into 4 strips.
  • Slide a flat spatula under each slide and transfer to the prepared baking pan.
  • Layer 4 slices of dough, then apples, the repeat layers two more times.
  • Cover the pan with plastic wrap sprayed with cooking spray and let rise for 20 minutes.
  • Preheat oven to 375 F. Bake the bread for 35 minutes.
  • Remove from the oven and allow it to cool in the pan for 15 minutes.
  • Carefully turn the bread out of the pan onto a serving plate.
  • Serve warm.


  • Thinly slice the apples for best results.
  • Use parchment paper to easily lift the dough into the baking pan.
  • A flat spatula is essential!
