Despite all its negative elements, the heat of summer has one very wonderful effect: it ripens all the berries! Fruit stands and farmer’s markets are bursting with fresh fruit just waiting to be washed and consumed. The fourth of July offered opportunities to make those fancy Pinterest desserts overflowing with strawberries and blueberries. If you have some leftovers, or like me, just can’t get enough blueberries, then you’ll be happy to know that today is actually National (Gluten Free) Blueberry Muffin Day! 🙂 Just another reason to celebrate these little, delectable berries.
In honor of this awesome holiday and our gluten-free lifestyle, we’ve rounded up some of the best gf blueberry muffin recipes we could find and, of course, added our own for you to try. We found many different kinds of muffins, from ones with a tropical twist to berry-chocolate combinations! Confessions of a GF Mom has a great little secret for making super-quick muffins, or as she calls them, pamelas: Gluten-free pancake mix! She also uses coconut milk to add texture and moisture to the batter. If you’re in a hurry, this may be the recipe for you!
Muffins for Two
The Minimalist Bakers Dana and John admit to often throwing away leftovers, so they find that making just a couple muffins in ramekins is better for them. Their vegan muffins are pretty good size, but don’t have the traditional muffin top. Brown sugar and almond milk make for a richer sweetness. If you’re having a good friend over, these might be just right to pop into the oven before you brew the coffee.

Chia seeds add nutritional value and a wonderful texture, and a rich maple syrup gives it a breakfast flavor.
Coconut and Chocolate and Blueberries, Oh My!
Vegan Richa claims that chocolate and blueberries do go together and then proves it with these scrumptious Vegan, Gluten Free Blueberry Chocolate Chip Muffins. Oat, almond, and coconut flours combine for a wonderful texture, so much that no gums are needed in the recipe! The addition of non-dairy yogurt offers moisture and a tangy flavor to the mix.
